Simple answer: use 1 and 0 TE formations.
Yes, one can put an OL at the missing TE for 1 and 2 te formations. I wouldn't expect an o line to catch more than about 1/4 - 1/5 tosses at him, and I personally really try to avoid it... (EDIT: throwing to an OL)
Ive not had much success running 6 OL in the 2/2/1 when using only running plays from the 2/2/1. STill need at least 1 TE for that fomation - even without pass plays, at least in my experiences.
As far as run plays go, it's not a bad idea even with multiple TE's avail to place a quick OL at the TE the RB runs toward.
MFN has not been kind to heavy 2 TE offenses since 4.4 due to the 4/3 zone/zone in plays being pumped up oddly to deal with the HB Flare abuse of v4.5 and the TE position being diluted/tweaked to a small degree to prevent the abuse of the GL pass play during v4.3.
Yes, you can sneak a WR in at TE, but he'll need to be buff as ****, tallish, and have a tasty BR/A.
