So we know speed goes up if a player loses weight. Do any stats go up when they gain weight?

Strength does not change visually anywhere but it is tied to weight . A player with 100 strength at 250lbs is like a 300 pounder with 50 strength . Heck sometimes it's more like 75 @ 300lbs . The effect is there but when is it used in the game ? Mostly in the push and dragging senerios , I guess....but that's where I see it in the game play veiwer . You'll see it if there is a clear discrepancy in the weight or strength .

Strength is used in two situations: determining the direction of a block on a one-on-one and pushing the pile during a tackle.
